Cucumber & Mint Gin Rickey

Ingredients

2 oz Open Coast Gin

.5 oz simple syrup

.75 oz lime juice

Fresh mint

Fresh cucumber

Club soda

Mint and cucumber ice spheres

Fresh mint for garnish

Directions

  1. Add 4-5 cucumber slices, 5-8 mint leaves and .5 oz simple syrup to a shaker. Muddle to combine
  2. Add Open Coast Gin and lime juice to shaker with ice and shake to chill
  3. Double strain over a Collins glass filled with mint & cucumber ice spheres, then top with club soda
  4. Gently slap the mint to express aromas, then add garnish to drink
