1 oz fresh lime juice
1 oz raspberry ginger syrup

1. In a shaker tin, add Open Coast Gin, lime juice, raspberry ginger syrup, and egg white.
2. Dry shake (no ice) for 15 seconds. Add ice and shake again for 15 seconds.
3. Double strain into a coupe glass.
4. Add a dash of raspberry powder and, using the back of a spoon, gently swirl it through the foam.
Syrup Recipe: Raspberry Ginger Syrup
1. Combine 1 cup water + 1 cup sugar in a saucepan. Add 1 cup roughly chopped ginger.
2. Heat over medium, stirring until the sugar fully dissolves.
3. Reduce to a gentle simmer and cook for 15 minutes. Remove from heat and add raspberries.
4. Steep at least 3 hours (or overnight). Strain and store in the refrigerator for up to two weeks.
